Deep-Dish Chocolate Chip Cookie for One
Ingredients (1 serving):
- 1 Tbsp unsalted butter, at room temperature
- 1/2 Tbsp unrefined granulated sugar, such as evaporated cane juice
- 1/2 Tbsp packed light brown sugar
- 1 Tbsp beaten egg, preferably organic (cover & chill remaining beaten egg for tomorrow’s cookie cup… you will be making another one!)
- tiny splash pure vanilla extract
- 2 1/2 Tbsp whole wheat pastry flour (can substitute with 3:1 of cake flour and all purpose flour)
- 1/8 tsp baking soda
- tiny pinch salt
- heaping 1 Tbsp grain-sweetened chocolate chips, such as Sunspire
Instructions
In a small ramekin or microwavable cup, combine softened butter and both sugars; stir well with a spoon. Stir in beaten egg and vanilla extract. Stir in flour, baking soda, and salt just until combined. Stir in chocolate chips.
Microwave on high for 35-40 seconds. Let cookie rest at room temperature for about 10 seconds before devouring.

What is overnight oats?
Overnight oats (OO) is basically oats soaked in the liquid of your choice. Either milk or yogurt, but you can always experiment with other kinds. It is often chilled overnight (hence the name) and usually left uncooked. However you can heat it up if you prefer to. It is perfect for days when you are in a rush to make breakfast, just make it in a jar the day before and it’s ready to go the next day.
You can add any kinds of toppings you want to it. You can add fresh fruits, nuts, dried fruits, peanut butter, etc. Many people also add chia seeds to the overnight oats. Be adventurous and try new additions, you might be pleasantly surprised!
This is also good to put together with your kids, let them play around with their favorite toppings and learn more about fruits and nuts, etc. There’s no or minimal cooking involved, so it’s safe for them as well.
In the following list, there are several sites that provide the recipes for a basic overnight oatmeal, and if can continue from there if you want to create your own personal one-of-a-kind oatmeal. Have fun! Remember, healthy doesn’t mean boring or tasteless!

Tomato Basil Soup with Grilled Cheese Sandwiches
There’s nothing quite like the pleasures of simple, yet great comfort food. A favorite of my eldest, Ginny. This is comfort food at its best - it’s so simple and so delicious! If you’ve never had tomato soup with a grilled cheese sandwich, what are you waiting for? Let’s go.
What you need:
- 750 grams of ripe tomatoes
- 1 small potato, peeled and chopped
- 1 onion, diced
- 2 sprigs of basil
- 2 teaspoons of sugar
- 2 tablespoons tomato paste
- 1 cup of vegetable stock
- 1/4 cup of heavy cream (optional)
- 1/4 cup of parsley or basil, finely chopped for garnish
Steps:- Place all ingredients, except the parsley and cream into a saucepan with the stock. Bring to a boil and let it simmer, covered, for 20 minutes.
- Serve soup with a swirl of cream (optional) and sprinkle with chopped parsley or more basil if you like. Serve with yummy grilled cheese sandwiches (read below for further info). Enjoy!
Note: I used a hand blender to make the soup smoother, if you prefer the chunky version skip this step.
Grilled Cheese Sandwiches
I used Italian bread, and smeared garlic butter (For this I mixed butter with minced garlic and Italian seasonings) on each slice and used american cheese, you can use Cheddar cheese or any other cheese of your preference. Then you grill it and eat it, of course!
